Roast Cranberry Pineapple & Date Chutney

1.5kg         Red Wine Vinegar

1kg            Apple 10 mm Diced

750gms      Light Muscavado Sugar

500gms      White Onions 10mm Diced

500gms      Chopped Dates

500gms      Pineapple 10mm Diced

350gms      Whole Cranberries

250gms      Raisins

30gms        Ground Cinnamon

15gms        Ground Cumin

15gms        Ground Coriander

10gms        Chopped Garlic

10gms        Chopped Ginger

10gms        Salt

5gms          Chopped Red Chilli

Roast the apples, pineapple, cranberry and onions. Mix the roasted apple, pineapple and onions with the cranberries, dates, raisins, garlic and ginger. Place in food processor until finely chopped. Tip into large pan. Add the spices, salt and vinegar and bring to the boil. Simmer for 20mins. Add the sugar and stir. Bring to the boil then simmer for approx 40-45mins or until thick and pulpy.
