Pappardelle with Mixed Wild Mushrooms
455gms Pappardelle Pasta
55gms Butter
40.5gms Extra Virgin Olive Oil
30gms Wild Mushroom Mix
25gms Fresh Lemon Juice
10gms Parmesan Cheese
10gms Fresh Chopped Parsley
8gms Garlic Puree
4gms Dried Red Chilli
2gms Salt
1gm Fine Black Pepper
Slice the mushrooms thinly, but tear the girolles, chanterelles and blewits in half. Put the olive oil in a very hot frying pan and add the mushrooms. Let them fry very fast, add the garlic and chilli with a pinch of salt. Continue to fry fast for 4-5 minutes, tossing regular. Turn the heat off and squeeze in the lemon juice. Meanwhile cook the pasta until al dente, add to the mushrooms with the parmesan, parsley and butter. Toss gently until pasta is completely covered.
