Greek Style Grilled Prawns with Pernod

                                                      

This Greek style dish is beautiful served with a lightly flavoured Cous Cous and a greek salad.

 

1kg               Large Raw Prawns

600gms         Tinned Tomatoes

175gms         Feta Cheese

125gms         Finely Diced Onions

42gms           Pernod

40gms           Extra Virgin Olive Oil

10gms           Garlic Puree

5gms            Chopped Fennel Leaf or Chopped Fennel Bulb

1gm              Salt

0.4gms          Dried Red Chilli

1gm              Course Black Pepper

 

Method :- Fry the onions in the olive oil, add the garlic, chillies then tomatoes and half of the pernod. Simmer for 7-10 minutes and season.Then leave to cool. Stir half of the feta cheese into the tomato sauce with the fennel and spoon it over a large dish.

Put the prawns in a bowl, toss with the black pepper and the remaining pernod, leave for 5 minutes to marinade. Put the prawns on skewers and grill for 1 1/2 minutes on each side.

Add the prawns and sprinkle on the remaining feta cheese.
