Chakchouka (Tomato Based Tunisian Dish)

                                                   

 This is a traditional Tunisian vegetarian dish . It can be eaten as a light lunch dish with fresh Bread or as an accompaniment to grilled meat or fish.

500gms       Whole Red and Green Peppers

450gms       Chopped Tinned Tomatoes

200gms       Sliced Red Onion

50mls          Extra Virgin Olive Oil

10gms         Garlic Puree

6gms           Chopped Coriander

4gms           Ground Cumin

2.5gms        Paprika Powder

1gm            Ground Cayenne

1gm            Salt

Method:- Grill the peppers until the skins are soft, approx 20 minutes. Rub off the skins under running water and coarsley chop the flesh. Put the oil, red onion and garlic into a frying pan, add the paprika, cayenne, cumin and tomatoes. Leave this to simmer untill reduced to a thick sauce. Stir in the peppers and season. Leave to simmer for 3-4 minutes and stir in the coriander. Serve with warm crusty bread.

Additionally you can add even more authenticity by cracking an egg into the centre of the Sauce 3 -4 mins before the end of cooking.
