Leek, Butterbean & Chorizo Gratin

800gms                  Butter Beans

500gms                  Chopped Leeks

500mls                   Chicken Stock

100mls                    Sherry

85gms                     Bread Pieces

75gms                     Chorizo

14gms                      Extra Virgin Olive Oil

9gms                       Chopped Garlic

 

Heat oven to 200C. Heat the oil, fry the chopped chorizo for a few minutes until crisp. Take out the chorizo leaving the oil in the pan. Add the leeks and half the garlic. Cook until soft. Pour in the sherry, beans and stock. Season. Bubble for 5 minutes. Blitz the bread into crumbs. Tip the leek mixture into an oven proof dish, stir in the chorizo and scatter over the breadcrumbs. Bake for 10 minutes.
