Moroccan Spiced Fish with Ginger Mash

500gms               White Fish Fillets

400gms               Sweet Potatoes, peeled and cut into chunks

14gms                 Butter

8gms                  Lemon Zest

4gms                  Garlic Puree

2gms                  Ginger Puree

1gm                    Red Pepper Puree

1gm                    Red Chillies, Chopped

0.5gm                  Fresh Chopped Coriander

 

Heat oven to 200C. Cook potatoes until tender. Mix the butter with the garlic, chilli, pepper, zest, coriander and seasoning. Mash the potatoes with the ginger. Spread the flavoured butter over the fish and roast for about 10 minutes, Serve with the ginger mash.
