Roast Tomato Chutney
1kg Tomato
750gms Apple
375gms Light Muscavado Sugar
350gms Cider Vinegar
250gms White Onion
250gms Raisins
150gms Green Pepper
5gms Ginger Puree
5gms Salt
Roast the tomatoes in the oven. Chop down the apple, onion, pepper and the roasted tomatoes. Add all the ingredients into a pan and bring to the boil. Stir until the sugar has dissolved. Boil uncovered for 40-45 minutes or until the chunks have softened and it has thickened.
